Description:

A beautiful sausage for this who really do like a bit of heat.

The heat in this robustly flavored pork & beef sausage is a tongue tingler.  The heat from the cayenne allows the wonderfully aromatic flavours of coriander and fennel to present themselves admirably against the heat of cayenne..

Cooking Instructions:

Either: Smoke on your barbeque at a low heat to off with to seal the outer casing and to allow the smoke to penetrate to your own liking.  Once you are satisfied with the level of smokiness, chuck on a hot grill tocook the sausage through quite quickly

This will seal the sausage casing to hold in aromatic juiciness of meat in this king of a barbeque center-piece. 

Or:

  1. Pre-heat your frying pan until medium-hot and melt a small knob of bacon fat or cooking oil
  2. Place the sausage into the pan and leave until it cooks half-way through
  3. Turn the sausage over and cook until done to an internal temperature of 75 degrees.  
  4. Or... Frequently feel the texture of the sausage with the side of your folk or cooking tongs until the sausage feels moderately firm. 
  5. Immediately remove from the hot pan and leave to rest on a plate for a couple of minutes

 Notes:  Unlike sausages that contain fillers and binders, it is important that you follow these important notes below, This is only natural with All-Meat products.

  1. Be careful not to overcook or your sausage will come out dry.  
  2. DO NOT pierce the casing.  This will allow the juices to escape and you will end up with a dry sausage 
  3. Cook as per instructions above before adding to casseroles or any other dishes

Recipe Ideas:

  • Italian pasta dishes - slice the cooked sausage into small segments and pop into your favourite Italian pasta dish
  • Leave to cool then place in the fridge.  Great as a healthy high-protein snack in the kids' lunchbox to keep them sustained between meals
  • Fantastic on pizza!  Just slice thinly, pop on your pizza with the other ingredients and bake.
